The cubaita is a typical dessert, very very old, known and prepared in the lower Piedmont and Liguria. The cubaita never failed on the table during the Christmas holidays.
Being an almost forgotten dessert, Augusto wanted to revive passion, mixing with natural ingredients such as walnuts, hazelnuts, almonds, "millefiori" honey of high mountains, grated peel of oranges.
For the wafers: flour, water, a pinch of salt. Available from October to March
Cubaida is also known as ubrin, mazapan, copeta.
